Yummy AW SHIT Cajun Shrimp Pasta!
Difficulty Level:  Dude, you can do it!

SAUCE :
1 Tbsp olive oil
2 Tbsp Cajun seasoning, divided
1 -2 tsp Aw Shit
2 Tbsp unsalted butter
2 garlic cloves, minced
1/2 cup diced tomatoes
1 1/2 cups heavy whipping cream
1/2 cup grated parmesan cheese, plus more to serve
2 Tbsp parsley to garnish, (optional)

 

Make pasta to packet instructions (I use fettuccine tonight). Reserve 1 cup of pasta water before draining.


Coat the shrimp with 1 Tbsp of the cajun seasoning and 1 to 2 tsps of Aw Shit (you determine your level of spiciness). In a deep skillet, heat 1 Tbsp oil over medium heat. Once hot, add the seasoned shrimp in a single layer and saute for about 1-2 minutes per side, or until the shrimp is no longer translucent, remove from skillet and cover to keep warm.

In the same skillet, melt 2 Tbsp butter with the minced garlic and cook 30 seconds until fragrant. Add in the diced tomatoes and saute for about 2-3 minutes.

Pour in the heavy whipping cream, remaining 1 Tbsp cajun seasoning and grated parmesan cheese. Bring to a simmer then reduce to medium/low heat and continue 2-3 minutes or until the sauce thickens.

Add the shrimp and pasta back into the skillet and stir until noodles are coated in sauce and everything is heated through. Garnish with chopped parsley if desired and serve.

Damn Good Shit-ty Steaks

Difficulty Level:  Come on!  Barely takes a brain!

 

 

Whatcha Need:
 

Favorite Cut of Steak

Butter

Bull Shit

Onion Powder

Set your steak out to come to room temperature, about an hour.  Then season it with Bull Shit and a little onion powder on both sides.  (I don't measure, so you will have to play with this to what your desired taste is.)

Heat your cast iron skillet (if you don't own a cast iron skillet, you need to get one.  Everyone should own cast iron!) and add a stick of butter - everything is better with butter, duh!

 

Place your steak in the skillet and sear on both sides.  Place a couple of generous pats of butter on stop and place in a 350 degree oven to finish off to your preferred doneness.  (Approximately 10 minutes for medium to medium well - at least in my oven.  Why are all ovens so different?????)

 

Take the steaks out to rest, yes, rest.  Stir up the seasoned butter sauce left in the skillet.  Cut your steak and drizzle the seasoned butter sauce over it.  Then wipe the drool from the corner of your mouth and enjoy that damn good shit-ty steak!

Throw It All In Scrambled Egg Omelet
Difficulty Level:  Ugh, Just Do It!

This recipe is kind of a personal preference kind of deal. 

I will give you how I made it, then you add or omit the things you prefer.  

 

This is one of my easy peasy and delicious scrambled egg omelet:

Add a little olive oil to your pan and sauté your chopped bacon (or if you want to go even easier use precooked real bacon pieces), onions and mushrooms, add quartered cherry or grape tomatoes, then add a couple of pats of butter and the fresh spinach (frozen or drained canned if you are desperate), crack in 4 or 5 eggs and begin scrambling, sprinkle with some Special Shit and finish cooking the eggs. Turn off the burner and add the feta cheese and shredded cheddar. I like to serve with a side of sliced avocado and a little sprinkle of cheddar on top.

Take Your Buns and Shove It - Bunless Burgers
& Some Real Shit-ty Potatoes

 

Burgers:

No buns? Who cares, just add topping to the burger patty!

Just coat your burger patties with Bull Shit and throw  them in a skillet and cook them in butter (Everything is better with butter!). Then sautéed the onions and sweet red peppers in the seasoned butter. Place the patties back in the skillet  and add cheddar cheese (or your favorite cheese) on the patty and place the hot onions and peppers on top, place the lid on the skillet until the cheese is sufficiently melted.   Mmmmm!

Potatoes:
Wash and then cut up your favorite potatoes into small pieces: I like the butter baby potatoes, but any potato will work.

Taco Stuffed Poblanos

 

Preheat oven to 350.

Slice pepper in half and remove seeds.

(I prefer to cut my peppers in half, as they are easier to eat.)

Place pepper halves on foil lined pan and brush olive oil on side.

Make taco meat with your favorite taco seasoning packet and add a tsp for 1 pound of ground beef (more if you like a lot of spice).

When taco meat is done, add a drained and rinsed can of black beans and frozen or canned (drained) of corn (I really like Mexican corn if doing canned) and shredded cheddar cheese (you can use your favorite cheese). Sometimes I will add a can of drained Rotel for even more flavor. Mix it all together and scoop into the pepper halves and sprinkle with more shredded cheddar.

Bake on 350° for 30- 40 minutes.

 

TIP: make tacos one night with extra meat and then in the next night or two make these pepper, just reheat the meat in the microwave and dinner is even quicker and easier.

Stuff Me with Some Shit Chicken Breasts

Either use thin cut chicken breasts or your chicken breasts in half and use a mallet to beat them a little thinner.  Then sprinkle with Chicken Shit and a little Himalayan pink salt on both sides.  Place on your baking sheet (I use foil, because who likes to scrub dishes) and fill with cream cheese, spinach (thawed frozen or fresh), shredded sharp cheddar cheese and bacon, rolled and pin with a toothpick.  Bake on 350 for about 35-45 minutes depending on your oven, just make sure your chicken is thoroughly cooked. 

Shitty Roasted Potatoes

Wash and cut potatoes (your choice of variety), place in a large bowl, add enough olive oil to coat potatoes and sprinkle with Special Shit.  Then place on a foil lined pan and roast in the oven 45 - 50 minutes or until the potatoes are tender.

Chicken Tortilla Soup

 

Cut up chicken breasts or tenderloins into cubes and cooked in a small amount of chicken broth and use a meat smasher (if you have one, otherwise break it up with a spoon or forks) to break up the chicken as it cooks (easier than cooking and shredding - I put a picture of my smasher above - trust me, get one!  I have loved mine for years.)
Add diced onion and cook it with the chicken. Sprinkled with Aw Shit and Chicken Shit.

Once the chicken is cooked and broken up/ shredded, add a can of corn, a can of rinsed and drained black beans, a can of Rotel and the remainder of the carton of broth plus one more container. Season the soup with more Aw Shit and Chicken Shit, a little chicken bullion, chili powder, cumin and dried cilantro and simmer for 20 minutes.

We like ours with a little sour cream, shredded sharp cheddar and avocado slices. Some in our family prefer to crumbled tortilla chips in it, some prefer the seasoned tortilla strips generally used for salads.

This is a very flavorful soup and super easy.

One Shit-ty Bird

Just mix one and half room temp, softened sticks of butter with Chicken Shit seasoning, a little salt, pepper and your favorite herbs. Today I used Herb de Provence (Italian Seasoning works great too), basil and rosemary. Separate your skin from the breast and slice the meat a few times, then slather the butter mixture under the skin and place the remainder in the cavity of the chicken. Sprinkle Chicken Shit, salt and pepper, as well as herbs all around the bird and place in your crockpot. Fill with chicken broth until covering to about half the chicken. Sprinkle in some chicken bullion if you want a little extra flavor. Then cook on low if you have all day. If you start later in the day, cook on high. On low, I would say about 6 to 7 hours. On high, I would say in the neighborhood of 5 hours. Cooking time will depend on the size of your bird.

Chicken Enchiladas 

 

For a small pan of 13-14 enchiladas:

3-4 chicken breasts fully cooked and shredded (I boil mine.)

1 pint of sour cream

1 can of diced green chilies

1 Tblsp Chicken Shit

1/2 tsp Aw Shit

1 1/2 to 2 cans of Green Enchilada Sauce

1 - 8 oz bag shredded cheddar

1 - 8 oz bag shredded monterrey jack cheese

Corn tortillas (I use white corn.)

 

Mix shredded chicken with Chicken Shit and Aw Shit, then mix in sour cream and diced green chilies and set aside.

Heat oil and then

Heat skillet with vegetable or canola oil and heat tortillas in oil until soft and pliable.

Add green enchilada sauce to just cover the bottom of your pan.

Fill tortillas with chicken mixture, roll and place seam side down. Once pan is filled with enchiladas, cover them with green enchilada sauce and then layer both cheeses on top.

Cover pan with foil and bake at 350° for 40 minutes. Remove the foil and bake another 5 to 10 minutes until cheese is fully melted. (I like my cheese slightly browned.)

Just Wingin' It

 

I am not one to make a lot of wings, but got a wild hair to play with it. I made some with Good Shit, Aw Shit, olive oil and Honey with a touch of Worcestershire sauce (might add some liquid smoke next time).

The others were following the BCR Bull Shit Wings recipe - mix a couple of cups of flour with 3 TBSPs of Bull Shit, coat wings with flour mixture and fry in oil until golden and done. Then mix 4 TBSPs of butter (I ended up using 6), 2 TBSP of brown sugar and hot sauce (i.e tabasco) to your desired heat level. You can add more brown sugar if you prefer sweeter.

 

Next time, I think I am going to make a liquid injection of butter, a drip or two of liquid smoke and Worcestershire and hot sauce and inject the meat for more flavor all the way through. This is how you learn to make things, then make them better.

Mexican Chicken & Rice

 

Melt two blocks of cream cheese with heavy cream and half a stick of butter in the Instant Pot (or on the stove in a large pot) then mixed in the our Carmie's Jalapeno Ranch dip mix, Ranch shredded cheese and Mexican or cheddar shredded cheese. Season chicken tenderloins with a little Himalayan pink salt and Chicken Shit and placed them in the cheese sauce and cook on manual setting for 30 minutes. 

 

Serve on a bed of rice.

Chicken Jalapeno Ranch Soup

 

I forget to defrost meat (this happens frequently), so Instant Pot to the rescue!

 

I threw about 1 1/2 to 2 pounds of frozen chicken tenderloins into the Instant Pot and cooked on manual setting for about 30 minutes, then shredded the chicken and stirred in Chicken Shit and about half to three-quarters of the Carmie's Jalapeño Ranch dip mix , then added a can of corn, a can of black beans (drained and rinse, a can of Rotel, and a few cups of water and mixed in some chicken bullion and dried cilantro (it's what I had on hand). Then I cooked on manual setting for 5 minutes and made rice in my rice cooker. And Voila! Top with some sour cream and shredded cheddar or Monterrey jack cheese.

It was so very tasty.

Never underestimate dip mixes, they can be used for a lot more than dips!

Aw Shit - Fajitas!

 

I was looking for something easy, so I grabbed a Goya Fajita (or whatever your favorite is - I like to make my own mix when I am not being lazy) seasoning pack and mixed it with some of our Aw Shit to season the beef, onions and peppers and put it all in my Instant Pot to sauté for a bit and then cooked on manual for 20 minutes while I made homemade tortillas.  The Aw Shit adds the spiciness we love.

SIMPLE CHICKEN NOODLE SOUP

 

I didn't make as big a pot as I normally do, as I am learning to cook for two, and still have some leftovers, since most of the kids are out of the house and the one still living here is not home much (and she is moving out before long). So this was enough to feed a couple with some leftover or a small family.

 

1 large chicken breast (The one I used was LARGE - She was a thick chicken with big boobs!!) - cut into small cubes.

Cook chicken in a little olive oil in a dutch oven or large stock pot. Ad in one whole onion - chopped, 4 to 5 celery stalks - cut into bite size pieces, and cut up carrots. Sprinkle with Chicken Shit (at least a couple of tsps - it is more of a to taste thing) and cook until chicken is cooked all the way through and veggies are soft.

Pour in one carton of chicken broth and drop in a cube or two of chicken bullion and allow to come to a boil. Add in a small bag of small egg noodles (or noodle of choice) and cook until noodles are done (egg noodles cook faster than other pasta). Sprinkle in salt (if needed), pepper and Italian seasoning and simmer a few minutes.

 

Serve it up! This meal doesn't take long and always hits that comfort spot!

SHITty Stir Fry

Difficulty Level: Easy, just takes a little time to prep, but so worth it.

Whatch Need:

Chicken breasts (cubed)

Chicken Shit

AW Shit

Olive oil

Every color of bell peppers - sliced - colorful food is bountiful in nutrients!

Onion - sliced

Broccoli - cut off stems and cut up crown

Carrot - shredded

Radishes

Soy sauce

Sweet chili sauce

Red pepper flakes

How Do You Do It:

Cube your chicken breast(s) and cook in skillet with olive oil and sprinkle on some Chicken Shit and AW Shit. Slice your bell peppers, onion and radishes, shred your carrot and cut up your broccoli and toss them in the skillet and make 'em sweat a bit. Then add soy sauce and sweet chili sauce to your taste preference and toss in a little bit of red pepper flakes for added spice. Cook until veggies are tender.

Serve over a bed of rice.

Sweet and savory yumminess!

Super Special Radishes

 

If you aren't cooking your radishes, you are not living life right!

Want a different kind of side dish?

Clean and slice your radishes, put a little olive oil in your skillet and a few pats of butter and throw in the radishes and sauté them until they are nice and tender, then sprinkle the SPECIAL SHIT on them and cook until the seasoning is nicely incorporated on them. Voila! Done!

Cooking them brings out this indescribable sweetness. That mixed with the Special Shit makes for a tasty pairing. Plus, radishes are CHEAP or even easy to grow.

I'd Squash That!

 

Slice squash and zucchini, place in a baking dish and cut up a stick of butter and place on top. Then you can either bake it for 20 minutes or so on 350° or microwave it for 8 minutes. Then sprinkle on the Special Shit and stir it up. Easy as can be.

Quick & Easy Chicken Fajitas

Cut two LARGE chicken breasts into strips. Place in a bowl and pour in 1/3 bottle of Italian dressing in and sprinkle in Chicken Shit and Aw Shit and stir it up. Let the chicken marinade for a bit.

Cut up bell peppers, poblano peppers, and onions.

Pour chicken mixture into your skillet (I am a cast iron girl!) and add in the peppers and onions and cook until chicken is thoroughly cooled and peppers and onions are tender.

Serve on tortillas (best - homemade) and add the toppings you like. I like avocado, sour cream and shredded cheese.

Sweet and Spicy Jalapeno and Red Pepper Chicken Pasta

Here is a new yummy meal that will be on the menu many times over in the future.

I took some chicken (one large breast since I am dining alone tonight.), cubed it in small pieces and cooked it in some olive oil and sprinkled with our Chicken Shit and some Aw Shit for a little spicy kick. Once the chicken was cooked I threw in some of the Sweet Jalapenos (diced) and diced roasted red peppers and cooked them for a bit. I cubed a block of cream cheese, a couple of tablespoons of butter and put it in the skillet to melt and added heavy cream to make a sauce. I then added the shredded smoked provolone and mozzarella cheese to the sauce and sprinkled in some Aw Shit and parsley.

Tasty Fried Egg on Toast

 

When you want an easy meal - Special Shit-ty fried eggs on toasted 7 grain bread with a sliced of sharp cheddar cheese and spinach with a side of Special Shit avocado slices.

I have a grill pan, so I toast my bread in my pan on both sides with a little butter. Then fried my eggs with Special Shit on both sides. Layer: Toast, cheese, spinach, egg. Then slice up an avocado and sprinkle Special shit on it and you can either put it on the toast or use as a side.

MAKE TACO NACHOS

Brown some ground beef (I am using ground venison) and some diced onions, add your favorite taco seasoning or your homemade one, then kick it up a notch with a little added heat with AW SHIT.

Assembly process is based on your own likings.

 

Mine:

Tortilla chips

Queso

Taco meat

Shredded sharp cheddar

(Then microwave for a minute)

Shredded lettuce

Tomatoes

Sour cream

Jalapenos

SPICY POBLANO CHICKEN & RICE

Whatcha Need:

A couple of boobs (not your family members or friends, just some chicken breasts)

1 or 2 poblano peppers, chopped

A can of Rotel (or generic, hey conserve those pennies to shop at Blue Willow, y'all!!)

Cilantro (to tatse), chopped

Mozzarella (shredded - a heaping handful)

Cheddar (preferably sharp, but just use what you've got - shredded - a heaping handful

CHICKEN SHIT

AW SHIT (We've got you covered - totally stocked!)

Salt (to taste)

Rice (make to package instructions - remember to rinse your rice thoroughly before cooking it to get that sticky starch out)

Whatcha Do:

Cut up your boobs in short strips and toss in a bowl with CHICKEN SHIT and AW SHIT.

Pour in your and Rotel, chopped cilantro, chopped poblano, mozzarella and cheddar cheeses and stir.

Add in your coated chicken, sprinkle a little salt and stir.

Set crockpot to high for 4-5 hours or low for 6-7 hours.

Make your rice (we love our rice cooker and recommend using a rice cooker). Then you can either do like we do and serve the chicken mixture over a bed of rice or combine it all together and stir it up.

SHIT-ty Crockpot Pot Roast

 

My, that is a mighty big needle you have there!

The better to cook with, my dear!

Just injecting some liquid smoke in my roast. Why not? Roast is generally pretty bland and I am far from a bland person, so here is my version of a crockpot roast that likes to hang out in the "hot tub" with all its veggie pals - radishes, potatoes, celery and carrots, and dressed in its favorites attire - SPECIAL SHIT and BULL SHIT soaking in more liquid smoke, Worcestershire sauce, water and some beef bullion.

Now for it to just relax and soak in all that goodness for about 6 to 8 hours on low in the crockpot.

GOAT CHEESE AND BACON JAM VENISON PATTY WITH VEGGIES

 

Whatcha Need:

A hunter husband (or lady hunters)

Ground venison (we prefer Axis, you can use beef)

Bull Shit - season both sides of the patty

Butter, lots of butter

Red, yellow, orange and/ green bell peppers (your choice, we like a mix)

Red onion

Fresh spinach

Goat cheese

Mills Gourmet Bacon Pepper Jam

 

Whatcha Do:

Form your patties, season each side with Bull Shit.

Melt butter in your skillet and add the patties, sear on both sides and cook to your preferred doneness.

Slice bell peppers (I did 3) and onion, add more butter to the skillet and add peppers and onions and cook until tender, add the spinach and cook done to a good wilt.

Serve the patty on your plate, top with goat cheese, bacon pepper jam, then add sautéed peppers onions and spinach.

EASIEST EVER MIXED VEGGIE SIDE

Fresh bag of mixed veggies - broccoli, carrots and cauliflower, butter and Special Shit.

Just dump veggies in a bowl, add in pats of butter and sprinkle with Special Shit, then microwave 8 to 10 minutes.

Voila! Dinner is done! Easy and flavorful!

SPICY PORK CARNITAS

Fresh pork cut into cubes (ours was hunted by my husband) - at least 2 pounds

1 Large sliced white onion

1 - 1 1/2 tablespoons dice jalapeno slices (jarred)

2 cans diced tomatoes with peppers (Rotel)

***Spice may be to taste. I am that annoying cook that doesn't measure my heart tells me when it is good. So these measurements are approximations.

2 tablespoons Cumin

1 1/2 teaspoon Onion powder

1 1/2 tablespoon Chili powder

1 teaspoon paprika

1 tablespoon salt

1 teaspoons AW SHIT (More if you want spicier, but might wait and add more at the end)

Mix all together in your Instant Pot, lock the lid on and set on manual for 115 minutes and then slow release; or cook in your crockpot on low for 8 hours or high for 6 hours.

You can adjust spices to your taste at the end of the cooking.

I like mine on a fresh flour tortillas with some sour cream, fresh avocado and shredded cheddar. So very good!!

MEXICAN CHICKEN & RICE BOWL

Cut up your chicken breasts, place in a bowl and toss with CHICKEN SHIT and AW SHIT, then cook in a skillet with a little olive oil, some diced red peppers and dice onion.

Cook rice per package instructions. Remember to rinse your rice thoroughly in a sieve before cooking to remove a lot of the starch that makes it sticky.

Take a can of black beans and rinse them. Do the same with a can of corn.

Place rice in a bowl, add in the black beans, corn and chicken, top with your choice of cheese, sour cream, HOT SHIT salsa, a squeeze of lime and enjoy.

REAL SHITTY CROCKPOT BRISKET

If you are like me and do not have time to sit around drinking beer and babysitting a smoker, then you are going to love this. 

Whatcha Need:

A brisket that will fit into a large oval crockpot

Special Shit

1/3 bottle of Worcestershire sauce

2 bottles of liquid smoke

 

Put salt and Special Shit all over the brisket (be generous with the Special Shit).  Stab it a few times.  Then use a syringe to inject 1 of the bottles of liquid smoke into various areas of the brisket.  Place the brisket into the crockpot and pour in the other bottle of liquid smoke and Worcestershire sauce.  Set crockpot to high for at least 10 hours.

DANG GOOD SHIT RIBS

Rack of pork ribs

4-6 Tablespoons of Good Shit (depending on the size of your rack)

2 Teaspoons of Aw Shit or cayenne pepper

1 1/2 - 2 Cups brown sugar

1 1/2 Teaspoons salt

BBQ Shit

Mix dry ingredients and rub generously on the ribs.  Place ribs on foil and cover.  Bake at 275 degrees for 4 hours or in the crockpot on low for 6 to 8 hours.  Pull them out and generously coat with BBQ Shit and bake another half hour to 45 minutes uncovered.

"It's a Quicky!" Beef Shish Kebabs  

 

I used London Broil cut into pieces, onion and green, yellow, orange and red bell peppers. after cutting the London Broil, I tossed it in Bull Shit, then lined the skewers with the meat and veggies and placed the skewers on a foil lined sheet pan and sprinkled a little more Bullshit, mainly on the veggies. I then baked them at 350° for 20 minutes.

AW SHIT SHREDDED CHICKEN TACOS

 

3 Chicken boobs

A packet of taco seasoning

2 teaspoons paprika

2 teaspoons chili powder

1 tablespoon cumin

2 teaspoons AW SHIT (want more of a kick, add more)

2 teaspoons onion powder

A heavy pinch of fresh or dried cilantro (whatever you have on hand)

2 to 3 tablespoons Olive oil

Salt to taste

Toss it all except your cilantro in your Instant pot and stir up. Set on manual and cook time of 25 minutes, then do a slow release. You can cook for 6 hours on low in your crockpot as well. Then pull out the chicken breasts and shred the chicken, place it back in the liquid in the pot and mix it up until well coated and sprinkle in chopped cilantro. Then taste and add anything you may feel it needs, we all have different tastes.

Heat your tortillas (we used corn). I like to layer mine as follows: chicken, shredded lettuce, avocado slices, shredded cheddar, lime creama sauce or sour cream and some fresh pico de gallo. Yum!!

SIMPLE SAUSAGE  & VEGGIE SHEET PAN DINNER

Let's keep it super simple tonight!

Cut everything up and throw it in a large bowl with some olive oil and Special Shit, then pour it out on a foil lined pan and baked at 350° for 30-35 minutes. If needed, sprinkle on a little more Special Shit.

I used:

Sausage (You could use cut up chicken or both)

Potatoes

Zucchini (wish I had a yellow squash too)

Onion

Green bell pepper

Orange bell pepper

Yellow bell pepper

Radishes

Special Shit

Chicken Fried Axis

(Also use for Chicken Fried Steak)

I started by tenderizing the Axis with a mallet and sprinkled on some Bad Ass Shit on both sides, then did a light flour dredge followed by a buttermilk and egg dredge and finally a flour, salt and Special Shit dredge before hitting the oil in my cast iron skillet, cooking until a deep golden brown.

If you are not a venison person, use cube steaks to make chicken fried steaks.

Sweet & Savory Butternut Squash

Butternut Squash

Olive Oil

Butter

Good Shit

Halve your butternut squash and brush olive oil on cut side and place facing down on a foil lined pan and bake at 350 degrees for an hour or until completely tender. 
Scoop the inside out and discard the peel.  Use a potato masher and mash the butternut squash, add butter and Good Shit to taste. 
MMMMMMM!!!!!

Deconstructed "Shit"kabobs!

Fresh Axis (you can sub beef or chicken)

Zucchini

Onion

Green bell pepper

Red bell pepper

Radishes

Cut up your meat of choice and veggies and lay them out on a sheet pan and sprinkle with some Bull Shit.  Add pats of butter on top and bake at 350 degrees for 30-40 minutes (until meat is cooked and veggies are tender). 

Open-Faced Grilled Ham & Fried Egg Sandwich

This is a simple meal to prepare and has a LOT of flavor!

1 slice of sourdough bread (of bread of choice)

1 slice of Sharp Cheddar 

Butter

Ham

Egg

Bell Pepper, sliced

Onion, sliced

Fresh Spinach

Special Shit

Butter both side of your bread and pan toast it.  Sauté your onion and bell pepper and fry your egg in butter and sprinkle with Special Shit. Grill your ham in the pan and then assemble: toast, cheese, ham, spinach, egg and sautéed onion and bell peppers.

Crawfish Etouffee 
(Recipe adapted for the Instant Pot)

1 1/2 - 2 lbs of crawfish meat (You can sub shrimp if you choose)

Roux:

6 Tbsps butter

1/2 cup flour

1 tsp Cajun spice rub (Tony Chachere's)

1 tsp Aw Shit 

Aromatics:
1 large onion - minced

1-2 stalks of celery - minced

1 medium green bell pepper - minced

2 Tbsps minced garlic

1/2 tsp kosher salt

Etouffee Broth:
1 qt shrimp or chicken broth

1 - 14 oz can petite diced tomatoes

Seasoning:
1 Tbsp Cajun spice rub

1 tsp kosher salt

1/2 cup mince parsley 

salt & pepper to taste

White rice for serving

Additional Aw Shit if you desire added spicy kick

Make Roux by melting the butter in your Instant Pot on sauté mode.  When it stops foaming, add flour, Cajun seasoning and Aw Shit and stir constantly until mixture is the color of peanut butter - about 5 minutes.  Add the onions, bell pepper, celery and garlic.  Sprinkle with 1/2 tsp of kosher salt and sauté until aromatics are softened - about 5 minutes.  Stir broth in, scraping the bottom of the pot to loosen any roux stuck on.  Pour in the canned tomatoes, do not stir.  Lock the pressure cooker lid on and set to manual for 10 minutes.  When it is done, allow for the pressure cooker to do a natural release for 15 minutes.  Open and place Instant Pot setting back on sauté with a low setting.  
Mix crawfish meat in a bowl with 1 Tbsp Cajun Seasoning, 1/2 tsp kosher salt and a small sprinkle of Aw Shit.  Add this mixture to the simmering broth and cook for 5 minutes on the sauté setting.  Stir in parsley, add any additional salt and pepper to your taste.  If you prefer it spicier, you can add in more Aw Shit, but I recommend you taste it well first, as the Aw Shit can sneak up on you.  Serve with rice and enjoy!
